Obviously I've been on a crazy pie baking extravaganza lately. I think it's because I'm pregnant. My female hormones are in overdrive. MUST MAKE BEAUTIFUL PIES!
One of my husband's favorites is apple and I figured it was appropriate since last week was the fall equinox. I wanted to spice it up a little so I made a pecan streusel topping instead of a regular crust. It was divine! My husband said it's like having a delectable cookie right on top.
I used this recipe for the pie filling, this recipe for the crust (I swear by this. It ALWAYS comes out perfect), and this recipe for the streusel topping (I added 1/2 a cup of chopped pecans to the streusel recipe.)
