This is a dish that my husband usually makes. It's lovely because it turns out beautiful every time no matter what you do and looks quiet fancy even though it's not. I love those kinds of meals.
The recipe is really simple. You just take a whole pork loin and about 3 or 4 fresh sprigs of rosemary and tie it as shown below. In a dutch oven saute 1 chopped onion and 3 toes of minced garlic in olive oil until soft. Add the pork loin and brown on each side (about 7-10 mins per side). Now simply add chicken stock until pork loin is 1/2 to 3/4 submerged and braise for about an hour, turning every so often. Just slice and serve.We like to serve this over creamy polenta. It's wonderful.

Yum, I love pork loin, and this is beautiful with the rosemary. Have you ever grilled on the bbq using rosemary as the "skewer"? We tried that this summer and it was yummy. It's good to meet you.
