I have been wanting to make homemade chicken pot pies for a long time so I finally decided to try it and I am so glad I did. They turned out A*M*A*Z*I*N*G. My husband said the best pot pie he's ever had.
So I used this pie crust recipe. I doubled it and was perfect for 6 mini pot pies. I always use this recipe it is wonderful every time. It has never let me down. Now I store my shortening in the freezer. It works great!
I used this pot pie recipe but I made a few modifications. I added one package of mushrooms and 4 peeled chopped potatoes. I also substituted cream for milk and I added a pat of butter to each pie before I put on the top crust. I must admit I did cheat a little tiny bit. I used a rotisserie chicken from the grocery store instead of cooking my own. The meat from one whole chicken was the perfect amount. I like to pick the chicken instead of cube it. I really think there's nothing worse than a cold, sterile piece of cubed chicken. It's so much nicer when it's a nice soft morsel. This recipe made 6 mini pot pies and was perfect! I'm so glad I finally decided to make this. It will definitely be a favorite in this house from now on. Happy Cooking Lovelies!!

Thanks so much for visiting me, your sweet comment and following me! : ) I have to tell you that chicken pot pie was my most favorite Winter food to eat before I had to go gluten free three years ago! It is missing out on this type of food that I loved that is so devastating to me about my celiac disease. This looks so good and, if I was any kind of cook, I would try to make my own with gluten free flour. Meanwhile, I enjoy looking at the pictures and remembering how good it was! :)
