I just joined this website a couple days ago and thought I would share with you all in case you are as big of a sucker for a good deal as I am. banana bread sunday

This morning I woke up dreaming of banana bread and luckily because I've been a baking fool lately I had all the ingredients. I didn't even have to bother with the grocery store. I love this recipe. It came from an issue of Savuer magazine. It's wonderful because it forms a delightful sugary crust but is super moist and dense on the inside. Mmmmm......I love it. Plus it's really easy and impossible to mess up. I've made it so many times I often don't really follow the recipe properly and it always comes out great. I love how it fills the house with sweetness.

white truffle oil mac n' cheese

Yesterday is was so cold and rainy and had been craving a good mac n' cheese so I made white truffle oil mac n' cheese. It was D*I*V*I*N*E.  Please make this! It's so delicious. It's good for your soul. I'm sure of it. I decided that if this batch came out good I would make it again with shitake mushrooms and lobster........Ugh......how scrumptious does that sound?
1/2 loaf french bread (stale or not)
2 toes minced garlic
3 tablespoons butter
2 tablespoons olive oil
1 pound grated sharp white cheddar
1 pound grated Fontina
1 pound cavappi pasta (spiral macaroni pasta)
3 tablespoons white truffle oil (you can buy this on amazon)
1/2 cup flour
1 cup cream
3 cups milk
3 tablespoons butter
2 tablespoons olive oil

Breadcrumbs first: You must make your own breadcrumbs for this dish. I have tried with and without homemade and the difference is HUGE!! Take your 1/2 loaf of french bread, it can be stale or fresh. Give it a rough chop, then put it in the cuisinart for a couple pulses. Now put 3 tbsp butter and 2 tbsp oil in large frying pan and add garlic over medium heat. Saute about 1 min and add bread crumbs. Stir until crumbs are slightly toasted about 5 minuets. Set aside.
Boil your pasta water, don't forget to add salt ans grate your cheese. Now in a medium saucepan your going to make a little roux. Heat butter and olive oil until melted over medium/medium high heat then add flour and whisk. Now slowly add cream and milk whisking in between. Heat mixture and whisk until desired thickness. Now in a large pot, I use the pasta water pot mix cream sauce, grated cheese and cooked pasta. Now add the truffle oil and mix well. Transfer to cooking dish and top with breadcrumbs. Bake at 350 degrees for 45 minuets. And ENJOY! I promise you will!

cauliflower ziti

 I love the flavor combination of this dish. It's sweet and savory and wonderful. On Saturday at our local farmer's market I picked up some cauliflower. The farmer has lime green and white so opted for the green just to have a little fun. That's what's featured in this dish.
1 head of cauliflower cut into 1 inch pieces
half a bunch of mint thinly sliced
1/4 cup pine nuts
1-2 tablespoons red pepper flakes
1 red onion diced
2 toes garlic sliced
1/4 cup golden raisins
a few slices pancetta diced
1 pound ziti
3-4 tablespoons olive oil
Pecorino Romano cheese for grating 
In a large frying pan saute with olive oil onions, garlic, and pancetta for a couple minuets then add red pepper flakes pine nuts, raisins and cauliflower. Let cauliflower brown and cook for about 10-15 minuets then add the mint. When cauliflower is tender, add the cooked ziti and a couple tablespoons of past water and toss. Garnish with fresh grated Pecorino and serve.

another "mom" dinner

I have an ongoing joke with myself every time I make baked chicken. I always say, "oh, this is such a MOM dinner" There's nothing wrong with a standard mom meal. I just fantasize that I will always be whipping up exotic, gourmet cuisine so whenever it's baked chicken I feel kinda hokey.
This meal was delicious. I never write out a traditional recipe when I'm posting something like this because I just don't think it needs one.
For this meal we used "purple viking" potatoes. The farmer who grew them said they "were like snow white on the inside". I L*O*V*E  that description.
Coat boneless, skinless chicken breasts with agave nectar (or honey) and roll in a mixture of bread crumbs and 1 tablespoons Tony Chachere's Cajun seasoning (any cajun seasoning). Bake for 45-50 minuets at 375 degrees. For mashed potatoes peel and cube 6 potatoes, boil until tender and mash with 1 stick of butter and 1 cup of cream. I like to mash my potatoes and also put them through a potato ricer. It make them much fluffier. And the baby veggies I just sauteed on medium in butter for about 15 minuets.
