I must admit that this might be one of my all time favorite dishes. I L*O*V*E it!!! Once again the inspiration for this dish came from our amazing honeymoon in Italy. Practically everything went wrong on that honeymoon including missed planes, lost wallets, keys, our minds.........you name it EXCEPT for the F*O*O*D and thank God because it's pretty much the sole reason we went to Italy in the first place. TO EAT!!! And we did!!
So these meatballs were inspired by a little place in Venice that we found that specialized in Meatballs, but not just any meatballs, whipped fried potato meatballs. They were so good we ate an order at the restaurant and took some to go for lunch the next day and even went back a third time, probably one of the more memorable food experiences of my life. I know I''m crazy but I get very emotional about food...........So here is my rendition of the fried potato meatballs. They don't even come close to the ones in Venice but they are still D*I*V*I*N*E if I do say so myself.
You could easily use a canned sauce if you wanted to make your life a lot easier but I never do that. I'm a pretty big stickler when it comes to FRESH ingredients. So I always like to use this basic tomato sauce recipe.
Ingredients for Meatballs:
3 potatoes, peeled and cubed
1/2 lb ground veal
1/2 lb ground pork
1/2 lb ground beef
4 tablespoons chopped flat leave parsley (or curly parsley)
1/4 cup water
1 beaten egg
1/4 cup ground Parmesan cheese
2 cups panko bread crumbs (set these aside in a seperate bowl)
5-6 cups oil (I like to use 1/2 olive ans 1/2 canola)
Salt and pepper
Recipe for meatballs
Boil the potatoes for 10-15 minuets or until tender. Remove from heat and mash. In a large bowl mix all above ingredients EXCEPT PANKO BREADCRUMBS. Set those aside in a separate bowl. Now mash everything together with potato masher or mix with hands. Once thoroughly mixed roll into 3-4 inch balls and roll in Panko breadcrumbs. Set on a baking sheet. Now heat (medium high) oil in a large, deep frying pan. Make sure oil is hot before placing meatballs in. Fry meatballs on each side for about 10 minuets. They should be golden brown. Do not try to turn them early or they will fall apart. Remove from pan and let cool on paper towels.
And I was in such a good mood after making this delightful meal that even my ill behaved beasts each got their very own meatball...........
