Hungarian Mushroom Soup

There is a mushroom soup at one of the local deli's here in town that my husband and I always order and LOVE!!! 
So when I saw {THIS RECIPE} for Hungarian Mushroom Soup I knew I had to try it. The thing I love the most about this soup is it's quiet easy to make but the flavor profile is complex. I love it. It's refreshing yet comforting! Try it. You'll love it (sorry the photos aren't very good. Some days I just get a really big rush).

Well, I managed to survive my first full time week back at work. Luckily, once I am trained I will only be working 2 twelve hour shifts a week. I will also be working nights. So as a nurse that means 7pm to 7am. Working nights is hard and it's not my favorite thing to do but at least I can breathe easy knowing my precious babies are at home snug in their beds.
My last week as a stay at home mom was really tough on me. There were a lot of tears. Being a stay at home mom has been by far the hardest and most beautiful thing I have ever done. If we had money I would stay home forever  making a beautiful life for my sweet babies but unfortunately we don't.
That being said, I forgot how much I love being a nurse. Being a nurse in my opinion is very similar to being a mother. It's a very noble profession. It's grueling, it's stressful, it's emotional and you often go unrewarded. However, the rewards you do receive are the kind that will change you forever. To be present for people's most tragic and most joyous event's in their lives is a true honor and one that I cherish.
I forgot how much I love being a nurse.  This prayer inspires me to be a better person and a better nurse.

  People are often unreasonable, irrational, and self-centered.  
Forgive them anyway.

            If you are kind, people may accuse you of selfish, ulterior motives.  
Be kind anyway.
            If you are successful, you will win some unfaithful friends and some genuine enemies.  Succeed anyway.
           If you are honest and sincere people may deceive you.  
Be honest and sincere anyway.
            What you spend years creating, others could destroy overnight.

Chocolate Hazelnut Tort with Shortbread Crust

I came across {THIS}A*M*A*Z*I*N*G recipe for a chocolate hazelnut tort and I just couldn't resist. I had to make it immediately and I am so glad I did. This was so simple. Honestly it didn't feel like I was really baking something. 
I love Neutella and have for a long time so I knew this recipe would would be amazing and it was!!!

For The Crust-
12 T. unsalted butter (1-1/2 sticks)
2 cups all-purpose flour
1/2 cup sugar
1 teaspoon vanilla
1/2 teaspoon kosher salt

For The Filling-
2 T. cornstarch
2 cups heavy cream
3/4 cup Nutella
1/2 teaspoon vanilla
1/8 teaspoon salt
Toasted hazelnuts for garnish

Preheat oven to 325F with rack in the middle.  Melt butter for the crust in a saucepan over medium-high heat.  Off heat, stir in sugar, vanilla and salt until dissolved.

Blend butter mixture into flour with a rubber spatula.  Press dough into an ungreased 10" tart pan with removable bottom.  Freeze crust for 15 minutes then bake 25-30 minutes.

To make the filling, whisk cornstarch into 1/4 cup cream in a bowl.  Combine the remaining 1-3/4 cups cream, Nutella, vanilla and salt in a saucepan.  Whisk in the cornstarch mixture and bring to a boil over medium heat, whisking constantly.  Once boiling, stir until thickened, about 1 minute.  Pour into the crust and smooth the top.  Refrigerate until set, about 2 hours.

Raspberry Pies in Jars
I am totally obsessed with making miniature things and things baked or cooked in individual sized containers.  So, how amazing would it to serve individual sized pies in glass jars? SWOON!!! Perfect for a dinner party or tea party, great for a special occasion like a baby shower or a bridal shower. 
I am testing these out because one of our best friend couples is getting married next month and I want to surprise them with something similar so I thought I would do a couple test runs and I'm glad I did, there were a lot of things to correct. I'll list them here so if you decide to try this you won't have the same problems I did to start. 
1. you must bake the pie crust separately from the pie filling because the filling bubbles up when baking and the cute cut out is lost under the filling when cooked. So you need to place the cut out pie crusts on their own cookie sheet with a little cooking spray so they won;t stick and bake for about 15 minuets. Just until crisp. Now place them on top of the already cooked pie filling! 
2. The crust shrinks considerably once it's cooked so you want to cut it a little bigger than the mouth of the jar so that once it's baked it will fit in perfectly. I did not do this and you can see mine are a little too small for my jars. I think it would have  much more stream lined look if I had used the bigger size cookie cutter. 
Also I decided to put one piece of crust at the bottom and one on the top but I thin kone on the top would be sufficient.

I used {THIS}raspberry pie recipe for the filling and I always use {THIS}pie crust recipe. I use it so  much I have it memorized. It perfect and flaky every time!
