Wedding Favors and Weekend Recap

Our dear friends Carlos and Lillie got married on Saturday and I made my first ever wedding favors. A few months back I made Brown Butter apple pie with a cheddar cheese crust that I L*O*V*E*D so I decided to use that {RECIPE} for these little wedding favors. 
What do you think? I think these would be fantastic if I started up a catering business. They would be so adorable for a baby shower, bridal shower or rehearsal dinner or a small wedding.



And here's a few shots from the wedding. It was a BIG trip for us. It was 3 hours each way and we had 2 babies, a drum set and my 30 pies. We were EXHAUSTED when we got home.

Old Fashioned Pineapple Upside Down Cake



INGREDIENTS
Topping:*
  • 1 cup of firmly packed dark brown sugar
  • 1/2 cup unsalted butter
  • 1 can (20 oz) of pineapple slices
Cake:
  • 1 1/2 cups all purpose flour
  • 6 Tbsp cake flour
  • 6 Tbsp of ground almonds (from about 2 oz of whole almonds)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups of sugar
  • 1 cup (2 sticks) unsalted butter at room temperature
  • 4 large eggs
  • 3/4 teaspoon vanilla extract
  • 3/4 cup sour cream

METHOD

1 Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. (After sugar melts, don't stir.) Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer ontop of the caramel mixture.
2 Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.
3 Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.
Makes 12 to 14 servings.




PLEASE make this cake. It is extraordinary!!!!! 
My hubby and I were both amazed by how wonderful and unique it was. I will definitely make this AGAIN and AGAIN!!! 

Well, I may not see you for the rest of the weekend. We are off on our very first road trip with both kids (YIKES) Some of our dear friends are getting married a few hours away. Wish us luck. We not only have both babies but as my husband is a musician, he is going to be playing for the reception and I also made my very first batch of wedding favors in the form of miniature pies in jars for 30 people. So we are toting 2 babies, a drum set and 30 pies. I hope we make it!!

New Items in My Online Garage Sale

Okay folks, I have added 2 new pairs of gorgeous BRAND NEW heels to my online garage sale. I bought a pair of 3 inch Steve Madden pumps for my birthday and I love them. I love super high heels but with these 2 tiny babies I just can't realistically wear them. So I think I will be investing in shorter heels that I can actually wear. 

Both of these pairs are BRAND NEW!! I have never worn either pair. Both are a size 8.

I actually have 2 other pairs of Sychelles and I L*O*V*E this brand. They are a 4" heel but because of the platform and rubber soles, they are VERY comfortable. I highly recommend Sychelles. Great brand!

Chicken Parmesan and Fresh Spaghetti

Chicken Parmesan:
4 boneless, skinless chicken breasts
1 cup shredded mozzarella
1/2 cup Parmesan cheese
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
2 eggs, beaten
3 cups bread crumbs
4 cups oil for frying
2 cups tomato sauce (if you want to make your own. I really like {THIS} recipe)

Recipe:
In a shallow dish mix bread crumbs,  pepper, salt, basil, oregano, thyme,  and Parmesan cheese. Heat oil in dutch over or high sided pan on medium high until 350 degrees.
NOTE: For extra tender chicken, marinate in buttermilk for 24 hours prior to preparing. Otherwise take 4 boneless, skinless chicken breasts dip in egg and then dip bread crumb mixture and place in hot oil. Fry 5 minuets on each side or until golden brown. It's okay if you suspect the chicken is not all the way cooked because we are going to bake it as well. 
Now remove and set aside. Place 2 cups of tomato sauce in the bottom of a baking dish and place chicken breasts on top. Next top the chicken breast with the shredded mozzarella. Now bake at 350 degrees for 25-30 minuets.

Fresh Pasta:
1 1/2 cup semolina flour
1/2 teaspoon salt
2 eggs
2 tablespoons olive oil
2 tablespoons water
1 cup tomato sauce to serve with


Recipe:
Mix salt and flour. Pour flour mixture onto counter top and make a well. Crack 2 eggs in the center of the flour well and beat with a fork. Now ad water and olive oil and slowly mix with flour. Once all the ingredients are mixed, knead dough with your hands for about 10 minuets adding small amounts of semolina flour as needed. The dough ball should not be sticky. It should be manageable.  Let the dough rest in a plastic bag or rag for 30 minuets. Now roll in pasta roller or with a rolling pin to desired thickness and cut. 
Boil in a large pot of salted water for 1-4 minuets. As soon as the pasta floats, it's done. Enjoy!

Pad Thai

I L*O*V*E ethnic food and Pad Thai is my husband's favorite Thai dish so I decided to give it a whirl. I  found the original recipe on Fine Cooking and adapted it from there. It's really quiet good. You can sometimes find fish sauce in the ethnic food section of your grocery store but if not any Asian market sells it or Cost Plus also carries it. 

 Ingredients:
1/3 cup fish sauce
1/3 cup fresh squeezed lime juice
1/3 cup agave nectar
5 tablespoons vegetable oil
1 clove of garlic , minced
20-30 shrimp, peeled and cleaned
4 large eggs, scrambled (set them on side)
10 ounces rice noodles (3/4 of a package)
1 1/2 cups chicken broth
1/4 cup chopped cilantro
1/4 cup chopped basil
1/4 cup chopped peanuts (or put them in a plastic bag and smash them with a hammer)
3 scallions, chopped
1 lime cut into wedges
1 cup bean sprouts

1. wisk together fish sauce, lime juice and agave nectar. set aside
2. In a wok or large frying pan heat oil and add garlic. cook 1 minuet and add shrimp. cook until just pink. do not over cook. put in bowl and set aside. Now scramble eggs in the same pan and set aside.
3. Now place the fish sauce mixture into the wok or pan and bring to a light boil. ad noodles and cook until tender and most of liquid id absorbed. about 15 minuets depending on the noodle you use. 
4. Now add back in shrimp, egg, bean sprouts, peanuts, scallions, cilantro and basil. Garnish with fresh lime wedges

What I Wore

This was a really hard post for me to do. I have been wanting to start participating in all the "what I wore" posts but honestly most days I wear my maternity clothes or workout clothes. My entire closet is a size 6/8 and I am about a 14/16 and that's AFTER loosing 25 pounds. I was a size 22 after I gave birth to Milton so I've already come a long way. 
I made my husband take a million photos and after weeding through all of them I decided I wasn't going to go through with this post because I didn't like the way I looked but then I decided to just buck up and deal with the fact that I am not perfect and I am working really hard to loose all this darn baby weight. 
I know that once I loose 35 more pounds I will be back into my size 8's and be a little happier. 
Yes, I have a HUGE pot belly. Oh well, at least I have 2 beautiful, healthy children to show for it. So, here's to me being really brave and showing you all what I really look like, pot belly and all!!!!!!
