Deep Dish Chocolate Chunk Cookies

It has been getting really chilly here, especially at night. I have been craving warm delicious treats. I saw {THIS} recipe ages ago and knew I HAD to make it. It came out just as good as it looks folks!!!! 

On a little side note, I am having surgery on my wrist this week and then have to work 2 shifts as well so you might not see me for a week or so, I'm not sure but I promise I will be back with something delicious. I am thinking chocolate pumpkin cupcakes!!!! 

 (3/4 cups)  Light Brown Sugar
 (3/4 cups + 1 T)  Granulated Sugar
 (1 cup) unsalted Butter at room temperature
2 large Eggs
1 t Vanilla Extract
1 t Sea Salt
 (3 cups) all-purpose, unbleached Flour
1 t  Baking Soda
(.75 lb) Dark Chocolate (cut into 1/2″ chunks or smaller)
Preheat oven to 375° F (350° for convection ovens)
1. Beat together the butter, brown sugar and granulated sugar until light and fluffy.  Add eggs, vanilla extract, and sea salt.
2. Sift together the flour and baking soda.  Stir into batter, then add chocolate chunks and stir until well mixed.
3. scoop into large size ramekins
4. Bake at 375° F for @20-25 minutes, making sure to take them out when they are still slightly underdone. They will be a light golden brown on the outside edges.  Serve hot with vanilla ice cream.

What I Wore White Cuffs and a Monogram

Here I am after 3 consecutive 12 hour night shifts and 4 hours of sleep with no makeup. HA!!!!! I don't mind looking a wreck, it's honest!!! 

My style comes from all ends of the spectrum.  I'm a little preppy and a little Bohemian. I have always loved a classy, classic look. Clean lines, simple colors. 
One thing I absolutely L*O*V*E are monograms. I have some monogrammed towels and card stock and a few of my button down shirts are monogrammed on the cuff. I just think there is something so charming and delightful about it. I also happen to love white cuffs on a button down shirt so this is one of my faves from J Crew.

Homemade Peanut Butter Cups

I am so glad I tried these because they were SUPER easy!!!! I really hope you will try them. They were really rich and delicious, just like a Reeses but slightly more rugged which I L*O*V*E! Honestly, I would enjoy these much more any day over a store bought peanut butter cup. 

1 bag semi sweet chocolate chips
1 1/2 cups smooth peanut butter
2 graham crackers (crushed into crumbs)
1 cup confectioners sugar
2 pinches salt

 Place 12 cupcake liners in a standard size muffin pan. In a plastic or glass bowl place the chocolate chips, 2 tablespoons of peanut butter and a pinch of salt and melt it in the microwave using 30 second intervals, stirring in between as not to burn it. Once melted and smooth, spoon one heaping tablespoon of chocolate into each lined muffin cup. You should have about 1/4 of the chocolate left on the bowl for the topping. Set aside. 
Mix the rest of the peanut butter, pinch of salt, crushed graham crackers and confectioners sugar in another bowl. You can mix is with your hands if you are having trouble combining it. Once combined form little discs with your hands. They should be slightly smaller than the width of the muffin cup so that the peanut butter will be completely concealed by chocolate. Once formed, press into the center of the melted chocolate. You want the chocolate to come up the side of the peanut butter, cradling it. Once they are all filled then spoon a small teaspoon of chocolate on top and carefully spread it across the top of the peanut butter disc. You don't need much chocolate for this because your bottom and sides should already be formed. Now place in the refrigerator to set. 


White Chocolate Pumpkin Pie Bites and Linky Party

Well, I guess Fall is oficially here and I wanted to start out with something pumpkin of course!!! I saw these the other day {HERE} and just couldn't stop thinking about them so I adapted the recipe and tried them for myself. DELICIOUS!!

Also, the method for my homemade peanut butter cups works great for these which you can find {HERE}
  • 10 oz good-quality chopped white chocolate or white chocolate chips
  • 10 muffin  liners
  • 1/3 cup sweetened condensed milk
  • 1/2 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 tsp pure vanilla extract
  • 1 cup powdered sugar
  • 1 cup finely ground cinnamon graham cracker crumbs (a food processor works best here)
  1. Place chocolate in the top of a double boiler (or make your own by setting a heat-proof bowl over a pot with 1 inch of water) over high heat. Bring the water to a boil, then reduce stove heat to low or simply microwave in 30 second intervals stirring in between.
  2. Spoon one tablespoon of white chocolate into each cup and spread out with back of the spoon
  3. In a medium bowl, combine the pumpkin, condensed milk, vanilla extract and beat with an electric mixer until smooth. Add in the powdered sugar and beat until smooth. Stir in graham cracker crumbs.
  4. Using a mini ice cream scoop or a small spoon, evenly divide the pumpkin mixture between the chocolate cups. Smooth the top to create an even surface.
  5. If the remaining melted chocolate has hardened too much, simply repeat steps 1-2.
  6. Evenly divide the remaining melted chocolate amongst the filled cups, smoothing the tops and making sure the chocolate reaches all the way to the edges in order to seal the cups.
  7. Chill in the refrigerator until set, about 1-2 hours.
  8. Unwrap cups and enjoy!
  9. Store in an air-tight container in the fridge.

I married a musician!
It has a lot of ups and downs but I LOVE his passion for his music and his life. I couldn't help but share this photo with you.  I love seeing  him in such a passionate moment. This is what he lives for!

We used to live in New Orleans prior to hurricane Katrina and he received a bachelor's degreee in Jazz Perfermance from University of New Orleans while we were there. He used to gig almost every night around town.  I never missed a gig. I went to every single one. I really miss that. Now that we have kids I haven't been in ages but I'm so proud to be the wife of this amazing drummer.

I love you Babe!!!

What I Wore, MUSTARD

Fall is in the air!!!!!!!  I just love these little brown boots and mustard pea coat. I'll be wearing this little pea coat ALL FALL LONG!!!! Now your probably asking yourself, did she really wear that while taking care of a 2 year old an 8 month old? Nope!!! 
But I thought it was a cute outfit to share:)
I am officially a size 8 now and 6 pounds from my original weight loss goal. I have a big post on that coming as soon I reach my goal!!! YAY!

Peach Crumbles

I just wanted to thank everyone who left such increadibly sweet comments on my "Heavy Heart" post. It really, rally means the world ro me and I really NEEDED to hear all of it!
Honestly, it has been a hard time for me and I can not thank you enough for the thoughts and prayers.

SInce it's peach season I made these last week for a guest post for my friend Casey and I just thought I'd hsare them here on my ny blog this weekend in case any of you missed it. These honestly came out amazing!!!! They are super easy and you CANNOT go wrong!
Enjoy your weekend freinds!
(Will yield 6 small jars or one 9" pie)

For pie filling:
6 fresh peaches peeled and chopped
1 cup sugar
1/2 tsp. cinnamon
2 eggs beaten
Juice from 1 lemon
1/2 cup of flour

For the Graham Cracker Crust:
8 graham crackers crushed
3 tablespoons melted butter
1 table spoon sugar

For the Crumb Topping:
2 1/2 cups flour
1 cup brown sugar
1/2 tsp. salt
1/2 tsp. cinnamon
2 sticks of butter, melted

Preheat oven to 350.
For The Filling combine everything in a bowl, mix well and let sit a few minuets while you prepare the crust and the topping.
For the crust simply put crushed grahams, sugar and butter in a small bowl and mix until sticky then press about 2-3 tablespoons into the bottom of each jar.
For the crumb topping mix all dry ingredients with a whisk, once combined, add the melted butter and stir. IT will make large wet lumps. This is perfect. You can now crumble the lumps up if you wish to get the desired size.
Now add your peach filling on top of your graham cracker crust being sure to leave a little room for the crumb topping. Now top with crumb topping, place the jars on a cookie sheet lines with parchment paper and bake for 30-35 minuets on a low oven wrack or cover the crumb topping for about 15 minuets so it doesn't get too dark and crispy. Enjoy with ice cream!

A Heavy Heart

I went back to work full time this week. I had already been working more than half time since Ginger was 3 months old but for some reason the extra hours just really put me over the edge.
I was always a very dedicated, strong worker before I had kids. I always had at least one job, sometimes two. Before we had kids it was always known that I would work full time after the kids were born. It was expected by me and my husband. I was fine with it.  I liked working.
After the kids were born everything changed. Not only did I not want to go back to work but I felt like my heart was being ripped out of my chest having to leave them. I'm the kind of mom who never left little Milton for more than 2 hours until he was 14 months old and his sister was born. My natural instincts to protect and be with my children are strong and emotional for me. It's hard because  I read or hear about all these moms who have the priviledge to stay home with their children and they are complaining about the most trivial things and it makes me angry because I would give anything to be in their shoes. I know it shouldn't but it does. The grass is always greener.
For some reason after the children were born I didn't care what I said before. I didn't care that I had always agreed to work full time because we needed it. I don't want to. I want to be with my children. I feel angry. I feel like it is my right as their mother to stay with them. I feel like I am doing something horribly wrong by leaving them. Thank God they are with my husband who is the best father I could ask for. Day care was out of the question for me.
But I want to be the mom who is there for every second, every milestone. I don't want to miss a thing. I want to know every single in and out of their routine. I want to have fresh baked goodies for them waiting after school. I want to wipe evry dirty face. Give every bath. single every song, read every book. I want to be an amazing mother. I know I still can be but it's not the same in my eyes.
But, there is no option. There is no choice. There is no cutting back on expenses. My husband and I have one car that we share and it's a very unreliable 95 Subaru. We don't have cable TV. We NEVER and I mean NEVER go out to eat. Our cell phones get shut off periodically because we can't pay the bill.
I HAVE TO DO IT! I have to work and I am just torn apart about it.
I'm sorry if this was an extremity negative post but this has been weighing VERY heavy on my  heart for a long time now, Thank you dear readers for listening. I needed to get that out.
And I know this too shall pass.
