Ingredients for Pizza dough for Calzone: NOTE: you may use store bought dough or you may use a simpler pizza dough recipe if you have one. I just prefer this one but it does require preparation the night before.
1/2teaspoon instant yeast
1. Mix the flour, salt and yeast in a large bowl.
2. Add the oil, water and sugar and mix until it forms a sticky ball of dough.
3. Knead on a clean surface for 5-7 minutes adding flour if it is too wet or water if it is too dry.
4. Place the dough ball on a pan, spray it with oil and cover with plastic.
6. Place the dough in the fridge and let it rest over night or up to three days.
7. Flour (or oil) your hands and lay the dough across your knuckles. Lightly bounce the dough on your knuckles, turning it and stretching it until it reaches the size that you want. Try to make a bug rectangle shape.
9. Place the dough on a baking pan that is lightly sprayed with cooking oil
10. cut diagonal slits on either sides and fill with calzone filling
Brush with garlic butter and bake for 45 minuets at 350 degrees.
Ingredient's for Basic Marinara Sauce:
(Note: you may also use a nice store bought sauce to simplify even more.)
2 cans whole peeled tomatoes
1 carrot, finely shredded
1/4 cup olive oil
1 onion finely diced
4 cloves of garlic, minced
3 tablespoons fresh thyme minced
salt and pepper to taste
Directions for Marinara Sauce:
heat olive oil in saucepan over medium/medium high heat, add onion and saute for 10 minuets until a little soft. Than add the garlic, shredded carrot and thyme. Stir and let that cook and marry with the onion for another 10-15 minuets. Now open your canned tomatoes and pour the excess fluid into the pot right away. Now get each tomato from the can give it a rough chop, throwing them in the pot as you go until all 2 cans are in and all the juices from the tomatoes are in too. Now salt and pepper to taste. about 2 teaspoons salt and many grinds of pepper. Let this simmer on low for 30-40 minuets. FINISHED. set aside.
Ingredients for Calzone fillling:
3 tablespoons olive oil
4 links hot Italian sausage
1 green bell pepper
1 onion
1 large package os baby Bella mushrooms
salt and pepper to taste
1.5 cups shredded mozzarella and 1/4 cup Parmesan. optional!
Directions for calzone Filling:
In a medium saucepan place Olive oil, onion and mushroom. Saute for 25 minuets or until translucent and soft. Now add bell pepper and saute another 8 minuets. Season with salt and pepper. set aside
In a separate saucepan, saute the 4 links of Italian sausage on medium high until your skins area ll browned, remove and set aside to cool. If they are not completely cooked on the inside it's ok because we are going to bake them as well.
Once the sausage is cool enough to handle slice into 1/2 inch circles, mix with the onion, mushroom, pepper mix and set aside.
Once your pizza dough is ready and rolled out, fill the center with the calzone filling. You may or may not top with shredded mozzarella and Parmesan cheese, but this totally not necessary, It comes out Delicious either way!
Brush with butter and garlic. Bake for 45 minuets at 350 degrees and serve hot with Marinara!
