My Family on Christmas

We spent all morning in our PJ's....I went on a run while the kids napped and then we went to a dear friends house for a Christmas gathering.

Christmas Morning

Christmas this year was wonderful! 

The kids had a BLAST!!!!!!! We didn't even opened all the gifts because they were content after only a few so we have gifts to keep on giving through out the week. I Love it! 

Half way through, my mom showed up and surprised me with a top of the line digital sewing machine in an adorable hot pink bag. I CRIED!!!

Yes, I have been dying to open up a couture apron shop but without a sewing machine and with our financial situation, I wasn't going to be able to afford one anytime soon. so needless to say I am ecstatic.

My shop should be open in 2 months. That should give me time to research, learn my machine and get the fabrics I want. My head is already bursting with ideas. I can't wait!!!! 
It's amazing how mom's can work miracles even when your 33 years old. 
I love you so much mom!!!

Puff Pastry Mascarpone Apple Christmas Trees


Ohhhh the excitement is building around here big time. I finished my work week, have been running like a maniac and managed to do all the kids shopping and my husband's shopping late tonight. Then I came home and wrapped gifts for 2 hours. Phew!!!!!! 
Santa is getting a workout this year for sure but I can't wait to see my little one's eyes light up on Christmas morning when they see what Santa has done!!!! 

So my friends I will back with some family photos from our little Christmas celebration either Christmas night or the following day. 
I saw these Christmas tree puff pastries and had to make them.,They were a little labor intensive but crazy good. My hubby ate them all on one day:) 

Recipe for Apple Filling:
2 granny smith apples, peeled and cubed
3 pink lady apples, peeled and cubed
1 cup Chai concentrate
3/4 cup sugar
pinch salt 
1/2 teaspoon Cinnamon
1/4 cup of flour

Mix everything together in an oven save dish and bake for 45 minuets at 350 degrees stirring every 15 minuets. Apples should be tender. Remove and set aside.

Mascarpone Filling:
1 small container of mascarpone cheese 
1/8 teaspoon nutmeg
1/8 teaspoon Cinnamon
3/4 cup powdered sugar 

Mix everything together with a spatula and your ready to fill. Set mascarpone cheese mix aside until ready to fill trees!!

I got the original idea for this recipe on {THIS} blog. Please go there for a detailed tutorial on hoe to make the actual Christmas Tree shape. Her's came up much neater than mine:) Find tutorial {HERE}.

Now fill Christmas trees first with a layer of the Mascarpone cheese and then about 1/4 cup of the apple filling, assemble, brush with butter and bake at 400 degrees for 12 minuets. Then brown the tops under the broiler.

Homemade Christmas Peppermint Patties

I Shared this recipe a few weeks ago onthe Shine Project but just thought I'd share it here with you today just in case you needed some last minuet Christmas ideas!!!!

Homemade Red and Green Peppermint Patties

1 can sweetened Condensed milk
5-6 cups powdered sugar
1 tablespoon peppermint extract
3-5 cups semi sweet chocolate chips
2 tablespoons shortening
1 tablespoons red gel food coloring (you can buy this at any craft store but if you only have the kind you buy at the grocery, no worried use about half the little bottle)
1 tablespoon green gel food coloring (same as above)

1. divide the sweetened condensed milk into 2 bowls (about 1/2 cup each if your measuring)
2. add food coloring to each bowl, one red and one green.
3. Add 1/2 a tablespoon of peppermint extract to each bowl and mix.
3. slowly add the powdered sugar one cup at a time to each bowl. You will probably use about 3 cups per bowl. You want this mixture to be firm. You might have to use your hands to mix at the end. Beware it will be quiet sticky.
4. Once it is the right consistency, form little disks or balls.  NOTE: because it can be quiet sticky coat your hands and the ball in powdered sugar while trying to form.  Place on a wax paper covered baking sheet and put in the freezer
5. once really cold or frozen, microwave your chocolate chips and shorting  in 30 second intervals as not to burn it stirring in between until smooth.
6. Take a fork, place the peppermint patty disk on top and dip. Place immediately on a wax paper cookie sheet. Once all are finished place in freezer to set. 
7. You may pipe a little melted chocolate on top for decoration. Simple put a small amount of melted chocolate into a zip lock bag and cut a tiny little hole in the corner and pipe away.
