Spring Training. 20 miles

Well......I did......I completed my LONGEST training run before the marathon. Now the tapering begins! Hallelujah!!!!

4:30 AM HER I AM!!!!

Trying to gag down 2 cliff bars at the crack of dawn. Not my favorite but totally necessary!

Last week after my 18 mile run I strarted to devlop a bit on a shin splint in my right leg. DRAT!!! I have remained injury free for 6 months but Oh well.    It really didn't seem to affect me too much.

I did 20 miles in 3 hours and 11 minuets. 9.36 min/mile average pace! AWESOME!!!

At miles 14 and 15 at the peek of my runners high I decided to do two miles of Boston Marathon pace just for fun. That's 8.30 min/mile!
Slow finish but had hills on mile 19 and 20 so I was beat by then.

I usually start refueling on mile 10 and then every 3-5 miles after that. I always use GU energy gels. I stick to vanilla and chocolate. All the berry flavors make me ill along with any of the wacky ones so I keep it simple.

Me after the 20 mile run. I'm pooped. I hobbled into the shower and onto the couch shortly after this.

Now doing a little RICE
R: rest
I: ice
C: compression
E: elevation.

Best treatment for minor leg injuries!

Off to the grocery in my fave new Running T!

LUNCH!!! Salad and chocolate milk. PERFECT!

Marathon is 3 weeks away and I now I got this in the bag. Oh and my wonderful friend Anna is making me a custom running skirt for the marathon! I can't wait to show to you all. It's crazy gorgeous!!! Here's a sneek peek!!!

A few Tips for Keeping the Pounds Off

We all struggle to find ways to make keeping the pounds off fairly easy.  And as I have learned with my recent weight loss journey it really is all about moderation.

I honestly kinda hate to admit that. I used to think I had to stick to some horribly restrictive plan to really loose any weight but it's simply not true and only makes your goals unattainable.
If you truly want to be successful, YOU NEED MODERATION.

Eating a few sweet treats now and then is just as important as sticking to your "healthy" diet is. If you don't splurge now and then, you will end up "cheating" and binging worse.

So here are a few things that help me stay on track

Eat lots of big, fresh, healthy things like salad for lunch!! So easy to make. This took me 3 minuets to make and was delicious! It's full of vitamins, fiber, and flavor! YUM!!!

When I am working I try to prepare healthy meals to eat before I go in. I like to try to stick to higher protein and lower carb so baked chicken, asparagus and a little brown rice with soy sauce is PREFECT!!!!!!

It's also really important to indulge often. This is family cheeseburger night. I like to plan cheeseburger night and pizza night after my long runs.
I know on these days I can afford a few extra calories and you know what? We all deserve to have a treat!!!

My favorite thing to refuel after a workout is FRUIT!!!

Oh glorious fruit, how I love thee!!! I eat a big bunch of grapes, an apple and a glass of water immediately after my workouts.

I also always try to eat some fruit first if I am craving sugar. Sometimes it satisfies me and sometimes it doesn't. If it doesn't then I go ahead and eat a skinny cow Ice cream sandwich or a few bits of chocolate but it's great to try some fruit first and see if that's all you needed to curb that sweet tooth.

ohhh......I also like cut up strawberries with dannon light and fit yogurt!! GREAT healthy snack!

Try to work out consistently. Obviously I am a runner and right now I try to run 5 days a week but just try to be consistent with whatever your work out is weather it be walking, running or heading to the gym.

I don't have a gym membership so I just run outside and then I do push ups and crunches 4 days a week for a little strength training.

Me.......looking half asleep as I hit the pavement for another beloved run.

Try to get as much exercise as you can. I try to find any excuse to get outside. I walk with my kids even on days I already ran or worked out. It's fun, it gets the kids out of the house and for me burns some extra calories for free! Whoo hoo....can't beat that!!!

I pop the kids in the double stroller and off we go to the park. I try to do this as many days a week as I can. It's also great to just take them to the mall walking!!!!

Just a few tips that I find helpful in my weight loss journey!! Hope you find them helpful too!!!

Spring time Crab Cakes

You all know I have been super busy lately. Well, I haven;t had much time to spend slaving away in the kitchen but I did manage to whip these up in 30 minuets a few nights ago and they were DIVINE!!!

My one year old and two year old even thought so. It was silent at the dinner table. I kid you not!

Ingredients for crab cakes:
1 pound crab meat
4 green onions thinly sliced
2 eggs
1/3 cup crushed saltine crackers
1/2 red bell pepper diced small
1/4 tsp. garlic powder
1 tsp. salt
1/2 tsp. fresh cracked pepper
1/2 tsp. cayenne pepper
juice from 1 lemon
2 dashes Worcestershire

Ingredients for crust:
1 cup flour
2 cups panko bread crumbs
4 cups canola oil for frying

Place all in ingredients for the crab cakes in a bowl and toss gently. Now form into disks the size of your palm and place on a cookie sheet. You may do this step ahead of time. If not using immediately then simply cover crab cakes and place in the refrigerator.
When ready to use place oil in a heavy bottom pan over medium heat for 5 minuets. Meanwhile dip each crab cake first in the flour and then in the panko breadcrumbs. You may take a few bread crumbs and press them into the cake a little if they aren't sticking. Gently place int he oil to fry on each side about 2 minuets or until golden brown. I recommend small batches of 3 or 4. Serve with fresh lemon.
