It just dawned on me that I should probably start thinking about what's going to happen when baby #3 arrives.
Like what am I going to eat when I have 2 toddlers and a newborn?
Yes, I have some frozen meals in our deep freezer but honestly not sure how many of them with be appropriate at first.
Both my other kids were dairy or gluten sentsitive.
Because I like to exclusively breast feed in the beginning it is essential to get my diet in order so my babies can be happy and not fussy.
So usually a few days post partum I go totally gluten and dairy free to ensure nice clean milk for the wee ones. However, as if it's not hard enough to find food to eat when you have a newborn and 2 other kids to look after, Imagine trying to then find gluten and dairy free food.
Yeah, It doesn't just appear like a bag of Doritos.
You have to put some effort and planning into eating clean.
My point is, I wanted to start experimenting with some SUPER EASY recipes before I am totally overwhelmed.
SAY HELLO TO THE CROCK POT!!!!!
This is the second time in 2 weeks I've made a whole chicken in my crock pot and it is amazing!!! Seriously, you just throw it in there and 4 or 5 hours later you have a perfect, falling off the bone chicken!
VOILA!!!!
Eat it for dinner, eat it for lunch, eat it left over in quesadillas, tacos or lasagna.
For the Rub on the Chicken:
2 teaspoon kosher or sea salt
1 teaspoon black pepper
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
1 bay leaf
1 onion chopped at the bottom of the crock pot
Place in crock pot and cook on high for 4-5 hours.
Now, I wanted something easy to go with my chicken so I decided on mashed sweet potatoes.
I saw {this} recipe on my friend Tiffany's {BLOG} and knew I had to make these but I made mine dairy free.

Oh how I love a crock pot!!!...and chicken!....and sweet potatoes! ^_^ I've never tried my sweet potatoes with coconut milk though! O_O I'm gonna try it now! Thanks for the tip!
