Easy Clean Eating....Quinoa Salad



So as I mentioned before I like to CLEAN after I have a baby and really most of the time I TRY to eat fairly clean so I have been trying some easy recipes before my kiddo arrives and wanted to share all the wonderful easy, delicious ways I am finding to eat clean!! 

Everyone thinks clean eating is so difficult and really it doesn't have to be. You just have to think outside the box a little bit! 

So here I made a little pot of Quinoa, a made another {whole chicken in a crock pot} and then simply used everything I had left over in the fridge.

Serve with a little salad dressing for extra zing!!!

This was my lunch and when my hubby came home I made him one just like this but I added some goat cheese and bacon!!! 

SERIOUS CLEAN TREAT!!!!! 




I hope you all will feel slightly inspired to eat healthy and try a couple new things, especially Quinoa if you have never tried it. It't a gluten free grain and is high in protein. Plus it tastes divine!!!! Way better than rice or cous cous in my opinion.

To make plain Quinoa simply take:
1 cup Quinoa
2 cups Water

Place cold water and quinoa in a pot, heat on high until boiling, reduce to a simmer and cover for 15 minutes! 
DONE!

I've been on a quinoa kick lately too. I've been pairing mine with oven roasted broccoli and avocado with a dousing of sriracha sauce, yum! If you have a rice cooker, making quinoa is even easier and you don't have to worry about it overflowing the pot. ;)
