Seared Diver Sea Scallops.
Simply wash your scallops well in cold water, remove the small piece I'd cartilage on the side of the scallop(it's quite obvious; some won't have it) and sprinkle with kosher salt and fresh cracked black pepper. Heat cocnut oil or ghee in a non stick pan over medium/medium high heat. Place the scallops in the pan and seat until golden brown. You want your scallops to be fresh. Do not over cook them. If they are a little medium rare that is ok; totally safe to eat!
Serve with a delicious salad!
Quick lemon shrimp.
Take fresh or frozen peeled shrimp that have been thawed wash in cold water, sprinkle with salt and pepper and sautée in a non stick pan until just pink. Remove and squeeze fresh lemon juice on top! Serve with anything!!! I chose avocado for this dinner!
Easy fried chicken wings.
Wash your chicken wings in cold water. Pat dry. Season with kosher salt and frsh cracked pepper. Heat about 1 cup of coconut oil in a deep crying pan. I used cast iron. Heat the oil on medium/high until hot and place wings in with thongs! Fry on each side a couple minutes or until golden. Serve with anything!! Again, I chose a fun salad!
Leftover grilled veggies and a hard boiled egg.
I have found that I have the most success in my busy life by making sure I meal prep. At all times I have a few prepared meats, always a dozen hard boiled eggs and grilled veggies or some sort of prepared vegetable.
Just try to think outside of the box. I find if I have quite a few options I can just mix and match everything!
Clean eating doesn't have to be so diffcuilt. You just need to prepare yourself and get creative!
