As you all know I have been following a Paleo lifestyle for a few months now and honestly I LOVE it. I never feel deprived or hungry.
In the past I had followed a similar diet to Atkins but now that I have removed the diary I have so much energy. I am in love with this lifestyle and the way I feel. I have so much energy!!!
So I thought I would share one of my favorite Paleo things to eat!!!! Protein pancakes!!! . I also like to Add some unsweetened coco to make them chocolate flavored. But this is my favored recipe.
You will need:
1 large banana or 2 small bananas
1/2 cup-1 cup almond flour (you can purchase this at any natural grocer or make your own)
A splash of vanilla extract
A tablespoon of sweetener (I like to use raw honey or stevia)
Simply place everything in the blender for a minute or two. Heat a non stick pan with coconut oil and cook pancakes over medium heat. These pancakes will need to cook a tiny bit longer than a traditional pancake so I like to cook them on a lower, slower heat. I like to top the with melted ghee and fresh cut fruit. They are amazing!!! I promise you will NOT feel like your on a diet!!!
